Spices: Vanilla, Cardamom, Cinnamon, Nutmeg, Clove & All Spice.
Aging Techniques: Aged and agitated on oak chips specially cut to bring out vanilla and cream flavor for a minimum of two weeks or until the flavor is perfected.
Distillation Process: During the first distillation – run as a pot distillation – all of the alcohol is driven out of the fermented molasses. The resulting wash is redistilled 5x through the copper column on the second distillation run, known as the spirt run.
Tasting Noted: Distilled from a Grade-A Pearl Select Molasses, this rum is spice-forward with a heavy nose of oak and vanilla that follows into a smooth finish. As a slightly stronger spiced rum, it is not quite as sweet as many on the commercial market. There is a full complexity of vanilla and cinnamon to the mouthfeel and the overall profile incorporates a slight taste of oak, vanilla, and banana through the intricacies of the spices as the blend methodically together.
