Pechuga is not a type of agave, but a very special recipe of mezcal. We use espadín agave for our SALVACIÓN™ Pechuga production, which takes between 6-12 years for the agave to mature. Our Pechuga production season is limited to the fall due to the special ingredients needed: About 20 creole fruits: honey-pineapples, crabapples, apricots, anise, Castille bananas, apples, cinnamon, almonds, raisins, rice (as a filter) and the breast of a female wild turkey (softer and more flavorful meat than the one of the male turkey) with no skin are used to prepare this amazing mezcal. Fruit must be in season and we do not allow any substitutions. SALVACIÓN™ Pechuga mezcal is the most rare mezcal we produce and requires incredibly high labor and ingredients, plus a third distillation.

All of this hard work creates an incredible mezcal that is balanced with the aroma of citrus, fruits and anise. SALVACIÓN™ Pechuga is flavorful, smoky with a delicately sweet finish.
